Don't totally agree that machines don't matter though. They all do very different things and some just arent suited for B&G. B&G in itself has different styles that will require differently tuned machines. But that's only a small part of it. 90% is just knowing how to do it right, or developing your own style. There isn't a right or wrong way. With experience you'll just figure out what works for you and the machines you use.
